The BEST holiday cookies...EVER!

We all have that favorite family holiday recipe we look forward to making (eating!) every year. Well in our house, the recipe is pumpkin cookies, or as my Dad calls them, pumpkin scones (so he doesn't feel bad eating them for breakfast😉). This recipe was passed down from generation to generation, just not from anyone in my family. It comes from my 7th grade home ec class.
Every seventh grader had this class for one quarter and these pumpkin cookies were the real deal. They're not too sweet, require very minimal ingredients, and only need to bake for 10 minutes.

THE RECIPE:
The Grocery List
1/2 cup margarine
3/4 cup sugar
1 cup pumpkin
1 egg beaten
1 t. vanilla
2 cups flour
1 t. cinnamon
1 t. baking soda
1 t. baking powder
1/2 cup chocolate chips
Large bowl:
1. Cream margarine and sugar until light & fluffy
2. Add pumpkin, mix well
3. Add beaten egg
4. Mix in vanilla
Medium bowl:
1. Flour
2. cinnamon, baking powder and baking soda
3. Add flour mixture to large bowl, mix well
4. Stir in chocolate chips
Make cookie balls and drop on un-greased cookie sheet
Bake for 10 minutes or until golden brown at 375
